Approximately 66.7 hectares of vineyards are planted with grapevines introduced from France in 1997, with an average age of 25 years for the grapevines now. \u003cbr\u003e\u003cbr\u003eOut of hundreds of hectares of land, the winery carefully selects about 15 hectares to produce the best quality grapes, adhering to minimal human intervention, respecting nature, and meticulously cultivating the vineyards through natural farming methods. Combining traditional concepts with modern facilities and technology, the winery produces organic and natural wines. The Starting Point Winery's orange wine is one of the earlier natural wines among Chinese wineries. Traditional techniques are used in the winemaking process, burying earthen jars filled with wine underground to allow the soil to absorb as much of the heat generated during fermentation as possible.\u003c\/p\u003e\n\u003cp\u003eAt the same time, the slight breathability of the ceramic jars allows the wine to come into contact with oxygen, endowing it with aromatic complexity during the maturation process. This wine is an elegant combination of a soft, delicate texture, fresh acidity, and balanced tannins. In the nose, there are a little saltiness, leafy Cabernet fruit, showing black currant, mulberry, thorns, and black cherry, with some fragrant herbal notes and a subtle taste of new oak (clove, toasted bread, and smoked). On the palate, the 2019 vintage starting point Cabernet Sauvignon has a full-bodied structure, smooth texture, delicate tannins, slightly elevated acidity, and a well-integrated 15% alcohol, providing a dark leafy Cabernet fruit framework with a reasonable concentration. With its moderate to longer length, the 2019 vintage Cabernet Sauvignon has improved quality compared to the 2019 vintage Cabernet Franc. It can be enjoyed now, but aging in the bottle for 3-5 years will further improve.
