The soils are 490-555 million years old, with bedrocks of metamorphosed schists, greywackes, gneisses, siltstone, and shale. To enhance complexity, 10% whole bunches were included in the ferment, with only pristine berries left on the rachis. The destemmed fruit was placed in a small, open-top fermenter, where gentle pigeage was performed twice daily as the natural fermentation progressed at a cool 24°C.
